01 / ABOUT THE PLACE

About this place

Tender steamed abalone coated in rich liver sauce and delicate, gently shaped nigiri that yields on the tongue anchor the experience at Sushi Toku. Located on the 2th floor of an office building in Mita, the restaurant highlights detailed preparation and skilled sushi craft.

The evening course opens with a progression of small appetizers designed to capture seasonal flavors. From silver-skinned selections like fatty sardines and tender-skinned kohada to sweet spiny lobster and marbled otoro, each cut receives targeted curing, slicing, or seasoning. The balance of vinegar in the rice and the brush of seasoned soy sauce are adjusted piece by piece to let the fish take center stage.

Weekday lunches feature daytime courses such as the Jo Sushi and Tokujo Sushi sets, as well as a daily limited special. Because lunch service concludes as soon as the day's prepared fish runs out, reservations by phone are recommended. It offers a more accessible way to enjoy the same standard of nigiri served at night.

To accompany the meal, the drink list offers seasonal sake along with wine by the glass, and guests may inquire about bringing their own bottles. Anchored by a clean, light-wood counter, the dining room pairs the master's approachable hospitality with an easygoing rhythm that avoids pretension.
